Never-Fail Waffles

Ingredients

  • 2 eggs
  • 1 cup milk
  • 1 cup flour
  • 1 tsp. sugar
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1/4 cup vegetable oil

Directions

  1. Preheat waffle iron.

  2. Separate eggs and whip whites until soft peaks form.

  3. In a bowl, blend yolks, milk, flour, sugar, salt, and baking powder.

  4. Add vegetable oil, making sure not to overmix.

  5. Fold in egg whites and mix well with a fork or whisk.

  6. Lightly oil waffle iron.

  7. Pour in about 1/2 cup batter.

  8. Close iron and cook.
