Ingredients
- 1 10 oz. pkg. frozen chopped spinach
- 1 loaf french bread
- 1 Tbsp. EVOO
- 1 lb. sweet Italian sausage
- 1 red bell pepper, seeded and chopped
- 3 large cloves garlic, minced
- salt and pepper
- 3/4 cup grated parmesan
- 8 oz. sliced pepperoni
- 16 oz. mozzarella, shredded
- 1 tsp. dried oregano

eheat oven to 425.

Defrost spinach in the microwave, about 6 min. on high defrost.

Wring spinach in a clean kitchen towel to remove as much moisture as possible.

Split the bread in half lengthwise and hollow it out.

Cut in half across, making 4 shells for pizzas. Place on a cookie sheet.

In a medium skillet over med-high heat, add EVOO, then sausage. Brown and crumble sausage.

Add bell pepper and garlic. Cook 3-5 min., then add spinach.

Remove mixture from heat and season with salt and pepper.

Transfer to a bowl.

Combine sausage mixture with parmesan and pepperoni.

Fill pizza shells evenly with mixture and top with shredded mozzarella cheese.

Bake until cheese melts and bread is crisp, 10-12 min.

Top pizzas with dried oregano.
