Kickoff Cheese Ball

Ingredients

  • 4 oz. cream cheese, cubed
  • 4 oz. Colby-Jack cheese, cubed
  • 1/2 cup canned chickpeas, drained and rinsed
  • 1/4 cup finely chopped jarred roasted red peppers
  • 1/2 cup small pretzel twists
  • Fresh chives, for decorating

Directions

  1. Combine cheeses and chickpeas in a food processor and blend until smooth, about 1 minute, stopping to scrape down the sides as needed.

  2. Spoon mixture into a shallow dish; add the red peppers and mix well.

  3. Spread the mixture evenly in the dish.

  4. Cover and chill for 30 min. or up to 24 hours.

  5. Place pretzels in a zip-top bag and crush them into fine crumbs.

  6. Pour crumbs out onto a piece of wax paper.

  7. Scoop the cheese out of the dish and form it into a football shape with your hands. Roll it around in the pretzel crumbs to coat.

  8. Transfer to a serving plate and use chives to make the laces.
