Ingredients
- 2 TBSP. olive oil
- 1 onion- chopped
- 3 garlic cloves
- 2 carrots -peeled and chopped
- 2 celery stalks- chopped
- 2 zucchini- diced
- 2 qts. chicken or vegetable stock
- 1-14 oz can of diced tomatoes
- 1-15 oz. can of cannellini beans
- 1 cup of frozen peas
- 1 cup of frozen corn
- 1 bunch fresh basil- chopped
- salt and pepper to taste
Directions

Saute vegetables in olive oil. Add diced tomatoes- beans-and stock. Bring to a simmer. Then add frozen veggies. Add salt and pepper to taste and finish with chopped basil.
