Minestrone Soup 2

Ingredients

  • 2 TBSP. olive oil
  • 1 onion- chopped
  • 3 garlic cloves
  • 2 carrots -peeled and chopped
  • 2 celery stalks- chopped
  • 2 zucchini- diced
  • 2 qts. chicken or vegetable stock
  • 1-14 oz can of diced tomatoes
  • 1-15 oz. can of cannellini beans
  • 1 cup of frozen peas
  • 1 cup of frozen corn
  • 1 bunch fresh basil- chopped
  • salt and pepper to taste

Directions

  1. Saute vegetables in olive oil. Add diced tomatoes- beans-and stock. Bring to a simmer. Then add frozen veggies. Add salt and pepper to taste and finish with chopped basil.
