Pumpkin Bread

Makes two 9×5×3 inch pans; three 8×4×2 inch pans; or four 7.5×3.5×2 inch pans; Can also be made in bundt pan

Ingredients
- 3 cups sugar
- 1 cup cooking oil
- 4 eggs
- 3-1/3 cup flour
- 2 tsp baking soda
- 1-1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2/3 cup water
- 1 can pumpkin (15 oz)

Grease bottom and sides of pans

In a large bowl, combine sugar and oil; beat on medium; add eggs and beat well

In another bowl, combine flour, baking soda, salt, cinnamon, and nutmeg

Alternate adding flour mixture and water to sugar mixture; beat on low after each addition

Beat in pumpkin; pour into pans

Bake at 350 for 55-65 min until toothpick in the center comes out clean

Cool in pans on wire rack for 20-30 min; remove from pans and cool completely; wrap and store overnight before slicing
