Pumpkin Bread

Makes two 9×5×3 inch pans; three 8×4×2 inch pans; or four 7.5×3.5×2 inch pans; Can also be made in bundt pan

Cook time: 60 minutes

Ingredients

  • 3 cups sugar
  • 1 cup cooking oil
  • 4 eggs
  • 3-1/3 cup flour
  • 2 tsp baking soda
  • 1-1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2/3 cup water
  • 1 can pumpkin (15 oz)

Directions

  1. Grease bottom and sides of pans

  2. In a large bowl, combine sugar and oil; beat on medium; add eggs and beat well

  3. In another bowl, combine flour, baking soda, salt, cinnamon, and nutmeg

  4. Alternate adding flour mixture and water to sugar mixture; beat on low after each addition

  5. Beat in pumpkin; pour into pans

  6. Bake at 350 for 55-65 min until toothpick in the center comes out clean

  7. Cool in pans on wire rack for 20-30 min; remove from pans and cool completely; wrap and store overnight before slicing
