Thai Coconut Curry

Serves 4 people

Ingredients
- 1 red onion, sliced
- 2T Gourmet Garden Fresh Thai Blend
- 200ml lite coconut milk
- 400g green prawns
- 4C vegetables, sliced eg: carrots, broccoli, cauliflower, beans, zucchini
Directions

Stir fry onion.

Add Thai blend, cook 1 minute.

Add coconut milk and prawns, cook 1 minute.

Add vegetables, cook further 3-5 minutes.

Serve on cooked rice or noodles.
