Steamed Fish Parcels with Coconut Rice

Ingredients
- For Fish Parcels:
- 4 fillets firm fleshed fish
- 1 clove garlic
- 2t grated ginger
- 1t fish sauce
- 2t sesame oil
- 1/2 red chilli, finely chopped
- 2 spring onions, finely sliced on diagonal
- coriander leaves and lime quarters to serve
- For Coconut Rice:
- 2C Basmati rice, washed and drained
- 1C coconut milk
- 1C water
Directions

Fish Parcels:

Grease 4 pieces of baking paper or foil.

Lay fish on each.

Sprinkle with parcel ingredients.

Season with salt and pepper, seal parcels.

Cook in oven at 180o approx 8 minutes, until fish is cooked.

Serve with coriander leaves, lime wedges and coconut rice.

Coconut Rice:
-
Put rice, coconut milk and water into saucepan.
-
Bring to boil.
-
Cover tightly, turn heat to lowest setting.

Cook 20 minutes without uncovering.

Stand further 10 minutes.

Season.
