Asian Salmon Parcels

Ingredients
- 600g fresh salmon fillet
- 2T soy sauce
- 2t sesame oil
- 2T oyster sauce (optional)
- 1t fresh ginger, grated
- 1 clove garlic, crushed
- 2 spring onions, finely sliced
- 1 - 2 red chillies, deseeded and diced
- handful basil, chopped
- 8T coconut cream
Directions

Cut salmon into 4 pieces, place on squares of greased foil.

Mix soy sauce, sesame oil, oyster sauce, ginger & garlic, brush over fish.

Spread spring onions & basil over fish.

Pour 2T coconut cream over each parcel, seal.

Bake 10 minutes at 180oC.

Serve hot or perfect at room temperature.

Nice served with mashed potatoes or rice.
