Maree’s Raisin Bread & Butter Pudding

Cook time: 40 minutes
Serves 8 people

Ingredients

  • 1/3C raisins, chopped
  • 1/3C orange juice
  • 2T caster sugar
  • 3 eggs
  • 2 egg whites
  • 1t vanilla
  • 1T orange zest
  • 1 1/2C low fat milk
  • 8 slices white bread, trimmed & halved

Directions

  1. Combine raisins & juice.

  2. Simmer over low heat for 1 minute.

  3. Cool.

  4. Apart from bread, whisk remaining ingredients.

  5. Arrange half bread slices in greased 6 cup baking dish.

  6. Sprinkle with half fruit mixture.

  7. Repeat.

  8. Pour milk mixture over layers, stand 10 minutes.

  9. Bake at 160oC, fan bake, 35-40 minutes, until just set.

  10. Serve warm or at room temperature.
