Maree’s Raisin Bread & Butter Pudding

Ingredients
- 1/3C raisins, chopped
- 1/3C orange juice
- 2T caster sugar
- 3 eggs
- 2 egg whites
- 1t vanilla
- 1T orange zest
- 1 1/2C low fat milk
- 8 slices white bread, trimmed & halved
Directions

Combine raisins & juice.

Simmer over low heat for 1 minute.

Cool.

Apart from bread, whisk remaining ingredients.

Arrange half bread slices in greased 6 cup baking dish.

Sprinkle with half fruit mixture.

Repeat.

Pour milk mixture over layers, stand 10 minutes.

Bake at 160oC, fan bake, 35-40 minutes, until just set.

Serve warm or at room temperature.
