Cold Tea Fruit Loaf

Easy & popular, low fat loaf

Ingredients
- 500g dried fruit
- 1C brown sugar
- 1C cold tea (or coffee)
- 2C self raising flour
- 1 egg, beaten
Directions

Put fruit, sugar and coffee in bowl, stand 2 hours for fruit to plump up.

Add flour & egg, mix until combined.

Cook in lined loaf tin at 150oc, fan bake, approx 45 minutes.
