Mocha Fruitcake

With no butter or eggs, you can kid yourself this is really Low Fat, but it actually isn’t toooo wicked!

Ingredients
- 1Kg mixed dried fruit
- 2C strong black coffee
- 150g nut chocolate, roughly chopped
- 2C self raising flour
Directions

Soak fruit and coffee overnight.

Add chocolate and flour, mix until combined.

Bake in lined, large oblong cake pan at 160oC approx 45 minutes.
