Mocha Fruitcake

Only 4 ingredients.
With no butter or eggs, you can kid yourself this is really Low Fat, but it actually isn’t toooo wicked!

Serves 25 people

Ingredients

  • 1Kg mixed dried fruit
  • 2C strong black coffee
  • 150g nut chocolate, roughly chopped
  • 2C self raising flour

Directions

  1. Soak fruit and coffee overnight.

  2. Add chocolate and flour, mix until combined.

  3. Bake in lined, large oblong cake pan at 160oC approx 45 minutes.
