Ingredients
- 4 hard-boiled eggs, peeled
- 1/2 cup cottage cheese (or mayo)
- 2 tbsp mayo
- 1 tbsp finely diced onion
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/8 tsp paprika
Directions

Place cold eggs in a single layer in a saucepan.

Add enough water to cover them by at least one inch.

Bring to a boil, then remove from heat, cover and let stnd in hot water for 20-25 minutes.

Run cold water over the eggs until they are completely cooled.

Cut each egg in half lengthwise.

Remove yolks and transfer to a small bowl; mash with cottage cheese, mayo and onion.

Stir in salt and pepper.

Fill egg whites with yolk mixture; sprinkle with paprika.

Cover and refrigerate for one hour before serving.
