Ingredients
- 3 tablespoons lime juice
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 2 ears fresh sweet corn
- 2 tomatillos, finely chopped
- 1 small sweet pepper, chopped
- 1/4 cup snipped fresh cilantro
- 3 tablespoons red onion, finely chopped
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
Directions
- In a small bowl combine 3 tablespoons lime juice, 1 tablespoon olive oil, and 1 teaspoon chili powder.

Remove husks and silks from 2 ears fresh sweet corn. Brush corn lightly with some of the lime juice mixture.

Grill corn on the rack of a grill directly over medium heat for 10 to 20 minutes or until tender and slightly charred in places, turning occasionally.

Set corn aside until cool enough to handle.

Cut corn kernels from cobs. Combine corn kernels, tomatillos, sweet pepper, cilantro, red onion, salt, cayenne pepper and remaining lime juice mixture.
