Dijon and mushroom chicken breasts

Serves 4 people

Ingredients
- 4 boneless chicken breasts (1 1/4 lb)
- 1/4 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbl olive oil
- 1/2 cup chicken broth (need to double??)
- 1 1/2 tbl dijon mustard
- 1 jar sliced mushrooms (4.5 oz)
- chopped fresh thyme
Directions

Flatten/ pound chicken to 1/4 inch

mix salt, pepper and flour

heat oil on medium hight heat

coat chcken with flour stuff

Cook 6-8 minutes, turning once, till not pink in middle

Remove and keep warm

Stir broth into skillet
-
Heat to boiling
-
Stir in mustard and mushrooms
-
cook 2-3 minutes, until slightly thickened

Spoon over chicken and sprinkle with thyme
