Oven roasted dijon chicken and roasted potatoes

Ingredients

  • 6 boness chicken breasts (pound flatter)
  • 1 lb small red potatoes, cut in fourths
  • 1/3 cup mayo
  • 3 tbl dijon mustard
  • 1/2 tsp pepper
  • 2 cloves garlic
  • Chives, chopped fresh

Directions

  1. Heat oven to 350

  2. spray pan

  3. place chicken and potatoes in pan

  4. In bowl, mix mustard, mayo, pepper and garlic

  5. brush over chicken and potatoes

  6. Bake uncovered 30-35 minutes, or until potatoes are tender and juice of chicken is clear when cut

  7. sprinkle with chives
