White bean Chicken chili

Serves 6 people

Categories: one pot

Ingredients

  • 2 tbl butter
  • 1 large onion chopped
  • 2 cloves garlic chopped
  • 3 cups cubed deli rotisserie chicken (or 2 large breasts)
  • 1/2 tsp cummin (double??)
  • 2 cans diced tomatoes, undrained (10 oz each)
  • 1 can white beans (15.5 oz) drained and rinsed
  • Sour cream
  • Cilantro, fresh chopped

Directions

  1. In 4-5 quart dutch oven, melt butter and cook onion and garlic

  2. Stir in remaining ingredients (not sour cream and cilantro)

  3. Heat to boiling

  4. Reduce heat to low

  5. Simmer 5 minutes, stirring occasionally

  6. Top servings with sour cream and cilantro
