Black Bean soup

Serves 2 people

Ingredients

  • 2 14.5 oz cans black beans.
  • 1 jar salsa (any type).
  • 1 can chicken broth
  • chili powder to taste
  • sour cream or shredded cheddar for garnish.

Directions

  1. Pour black beans into a pot over med heat and mash slightly with spoon (some people like to puree them).

  2. Add the chicken broth and turn up heat.

  3. Add the salsa and chili powder to taste and color preference.

  4. Stir to mix.

  5. Allow to cook until reduced and thick (about 30 min).
