Ingredients
- 1 med zucchini.
- 1 med yellow summer squash
- 1 med orange bell pepper
- 1 can chickpeas
- 1 can chopped tomatoes
- 1 can tomato sauce
- garlic salt to taste
- Olive oil
Directions

Cut the zucchini and summer squash in half lengthwise, and then slices.

Bring olive oil to simmer on med.

slice the bell pepper into short strips.

Add the vegetables to the olive oil and simmer until softened and browning a bit.

Add the chickpeas, tomatoes, tomatoe sauce, and garlic salt to taste and heat until warm.

Can garnish with cheddar cheese if desired.
