Strawberry Crème Fraiche Ice Cream

Ingredients

  • 4 cups ripe fresh strawberries or thawed frozen strawberries
  • 1/2 cup sugar
  • 1 tablespoon orange juice
  • 2 cups chilled crème fraiche

Directions

  1. If using fresh strawberries, hull them. Combine the strawberries, sugar, orange juice in a medium pot. Over high heat, bring to a boil, stirring constantly. Reduce heat to medium and cook for 2 minutes, stirring and mashing the berries. Set aside to cool.
  2. Push the mixture through a fine sieve into a large bowl, pressing down the solids with a spatula to squeeze out as much juice as possible. Scrape off the juice sticking to the underside of the sieve into the bowl. Cover and refrigerate until needed.

  3. In another bowl, whip the crème fraiche until firm peaks form. Fold a heaping tablespoonful into the strawberry puree to loosen it a bit. Continue folding in the crème fraiche, a few tablespoons at a time, working lightly upward from the bottom of the bowl. Pour the mixture into an ice cream maker and freeze according to manufacturer’s directions. When set, transfer to a container and freezer until ready to serve.
