Ingredients
- 4 cups ripe fresh strawberries or thawed frozen strawberries
- 1/2 cup sugar
- 1 tablespoon orange juice
- 2 cups chilled crème fraiche
Directions
- If using fresh strawberries, hull them. Combine the strawberries, sugar, orange juice in a medium pot. Over high heat, bring to a boil, stirring constantly. Reduce heat to medium and cook for 2 minutes, stirring and mashing the berries. Set aside to cool.
-
Push the mixture through a fine sieve into a large bowl, pressing down the solids with a spatula to squeeze out as much juice as possible. Scrape off the juice sticking to the underside of the sieve into the bowl. Cover and refrigerate until needed.
-
In another bowl, whip the crème fraiche until firm peaks form. Fold a heaping tablespoonful into the strawberry puree to loosen it a bit. Continue folding in the crème fraiche, a few tablespoons at a time, working lightly upward from the bottom of the bowl. Pour the mixture into an ice cream maker and freeze according to manufacturer’s directions. When set, transfer to a container and freezer until ready to serve.
