Lemon-Broccoli Rice with Chicken

This recipe was really simple and easy to make. The lemon zest really made the flavor pop. I replaced the frozen broccoli with fresh and I think it made the whole thing much better.

Ingredients

  • 1 tbsp. oil
  • 1 lb. boneless skinless chicken breasts, cut into strips
  • 1 clove garlic, minced
  • 1/4 tsp. ground black pepper
  • 1 tub Philadelphia Original Cooking Creme (10 oz.)
  • 2 cups frozen broccoli florets, thawed
  • 2 tsp. lemon zest
  • 2 cups hot cooked rice

Directions

  1. Heat oil in large skillet on medium-high heat. Add chicken, garlic and pepper; cook 5 to 6 min. or until chicken is done, stirring frequently.
  2. Add cooking creme and broccoli; cook and stir 2 min. Stir in lemon zest.

  3. Serve over rice.
