Red Pepper Risotto

Ingredients
- 1/4 cup long grain rice
- 1 1/4 cups milk
- 1 red pepper
- 1 zucchini
- 1 - 2 stalks of celery
Directions

Place the rice and milk in a pan, bring to a boil, then simmer, uncovered, for 5 minutes.

Discard the core and seeds from the pepper and trim the zucchini and celery.

Place the vegetables in a colander and rinse them under cold water, then chop the into small pieces.

Add the vegetables to the rice mixture, bring to a boil, then cover and simmer for about 10 minutes or until the rice is soft.

Puree or mash; use refrigerated portions within 24 hours.
