Goat cheese and roasted red pepper quesadillas

Ingredients

  • Whole wheat tortillas
  • 1 jar roasted red peppers
  • 8 oz package chevrie or other goat cheese
  • Pam

Directions

  1. Spray griddle or grill with pam.

  2. Microwave the tortillas about 10 seconds so they become warm and pliable.

  3. Spread half of each tortilla with goat cheese and top with some sliced roasted red peppers.

  4. Fold over and grill.

  5. Slice into wedges to make crispy quesadillas.
