Bulgar, Cucumber, and mint salad

Ingredients

  • 1.5 c water
  • 3/4 c bulgar wheat
  • 1 med tomato cut into cubes
  • 1 med cucumber, peeled, seeded, cut into cubes
  • 2 T fresh mint, chopped
  • 2 T olive oil
  • 1 T fresh lemon juice
  • Salt
  • Pepper

Directions

  1. Cook the bulgar and then combine with all other ingredients.
