Wayne’s Smoked Fish Chowder

Wayne first cooked this for us when we visited at his new home – impressed his Mum!

Cook time: 20 minutes
Serves 4 people

Ingredients

  • 2 medium onions, sliced
  • 2 leeks, finely sliced
  • 3 medium potatoes
  • 1 1/2 litres fish or chicken stock
  • 200ml lite cream or evaporated milk
  • 225g smoked fish
  • 250ml water
  • 300ml milk
  • little butter
  • chopped chives to garnish

Directions

  1. Saute onions and leeks in a little butter, until soft.

  2. Add 3 medium potatoes, peeled and chopped into largish chunks.

  3. Cook 10 minutes.

  4. Add cream or evaporated milk, and cook for 2 minutes.

  5. Remove half of the vegetables, puree the remainder.

  6. Return to pan with the solid vegetables.

  7. Poach the fish in the water and milk.

  8. Flake, add to the soup and reheat all.

  9. Serve in bowls, sprinkled with chives.
