Ingredients
- 1 T olive oil
- 1 small onion, thinly sliced
- 2 lb butternut squash, peeded, diced, cut into 1 " pieces
- 3 c chicken broth
- 1/2 c unsweetened apple cider
- salt and pepper
Directions

Heat oil, saute onion.

Add squash, cook 10 min.

Add broth and simmer 15-20 min

Blend w/ cider in blender.
