Vegetable and Bean soup

Ingredients

  • 1 1lb bunch swiss chard, thick stem ends removed and discarded.
  • 2 t olive oil
  • 2 celery stalks, chopped
  • 1 garlic clove, minced
  • 3 c V8
  • 1 14.5 oz can diced tomatoes
  • 1 15 oz can navy or white beans
  • 1/2 t dried oregano
  • Salt and pepper

Directions

  1. Submerge chard in cold water and rinse.

  2. Thinly slice stems and coarsley chop leaves.

  3. Heat oil and saute celery and onion til soft

  4. Add garlic.

  5. Add other ingredients (except chard).

  6. Cover, cook 10 min.

  7. Add chard last and cook 5 more min.
