Curried Zucchini soup

Ingredients

  • 2 t olive oil
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 2 med zucchini sliced into half moons
  • 1 T grated ginger
  • 1 t curry powder
  • 1/2 t garam masala
  • 3 c vegetable broth
  • 1/2 c plain ff yoghurt

Directions

  1. Heat oil and saute onion an dgarlic til soft.

  2. Add zucchini, ginger, curry, and garam masal and cook 3 more min.

  3. Add broth, cook 10 min.

  4. Puree and whisk in yoghurt.
