Chilled cucumber and mint soup

Ingredients

  • 3 cucumbers, peeled, seeded, chopped
  • 1 scallion, sliced
  • 1 garlic clove, chopped
  • 3 T fresh mint leaves
  • 1/2 c water
  • 1 8 oz tin reduced fat sour cream
  • 1 T lemon juice
  • 1/4 t salt
  • 1/4 t pepper

Directions

  1. Puree cucumbers, scallion, garlic, mint leaves, and water til smooth. Add other ingredients.

  2. Chill and serve.
