Ingredients
- 1 bag brown rice
- 1 tbsp. oil
- 4 skinless, boneless chicken breasts
- 1 1/2 cups thick and chunky salsa (medium heat)
- 1 can (11 oz) whole kernel corn, drained
- 1/4 cup fresh cilantro, chopped

prepare rice according to package directions.

while rice is cooking, heat oil in large skillet. add chicken breasts and brown on both sides (about 10 minutes). add next two ingredients. cover and simmer for 10 minutes or until chicken is no longer pink. serve over hot cooked rice, top with cilantro.
