Egg Brunch Casserole

Ingredients

  • 6-8 strips of bacon
  • 1 onion chopped finely
  • 1 clove of garlic minced
  • 1 red or green pepper chopped finely
  • 1 2lb bag frzn hashbrowns
  • 1 1.2 cup whole milk
  • 1 tsp dried dill
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions

  1. Spray crock pot with non stick spray.

  2. Cook bacon till crisp, cool, then chop into 1/2 in pieces, set aside.

  3. Saute onion, garlic and pepper for 5 min.

  4. Place 1/3 of fran hashbrowns in the bottom of crock pot.

  5. Add 1/3 of onion mix

  6. Add 1/3 of cheese

  7. Repeat layers ending with cheese

  8. In a lg bowl mix eggs, milk, dill, salt and pepper. Pour over ingredients in crock pot.

  9. Cover and cook on low for 8-10 hours.
