Baja Chicken Quesidillas

Taste like Ruby Tuesdays “Baja Chicken Quesidillas”

Ingredients
- 2 cups warm shredded cooked chicken
- 2 large onion- sliced into thin strips
- 2 large peppers- sliced into thin strips
- 3 cups feta cheese, divided into 6-1/2 cup partitions
- 6 tortillas (10 inch)
- cilantro
- basil
- Oil
- CHILI LIME SAUCE:
- 4 small green serrano chiles, seeded and chopped finely
- 1 cup lime juice
- 2/3 cup chicken stock
- 4 tablespoons fresh cilantro (coriander leaves)
- 4 cloves garlic
- 2 teaspoon sugar
- 1/2 tsp salt
Directions

Heat oil in pan over med-high heat

Add onions and peppers and saute till they start to carmelize, about 7-10 min, set aside.

Reduce heat to medium,add 1 tsp oil, place tortilla in the pan.

Sprinkle 1/4 cup feta cheese over half of the tortilla, then top with onions and peppers, then chicken, then chili sauce, then add basil and cilantro to taste all on 1- 1/2 of tortilla.

Pour 1/4 cup feta on top of chicken and onions and then fold tortilla over onto half covering the filling.

Cook until quesidilla is golden brown on both sides.

Repeat for all 6 quesidillas.

Cut into 4 triangles and serve with salsa

CHILI LIME SAUCE:

Combine all ingredients in a blender and mix until smooth. Be careful handling the chilies. Pour into a saucepan and bring to a boil, stirring occasionally. Remove from heat and allow to cool. Use warm.
