Brandied Fruitcake Cookies

Ingredients

  • 1 9 oz pkg condensed mincemeat, finely crumbled
  • 2 cups vanilla wafer crumbs
  • 3 tbsp light corn syrup
  • 1 cup sweetened flake coconut
  • 1 2/3 cups powdered sugar
  • 5 tbsp Brandy, Bourbon or Rum

Directions

  1. Line cookie sheet with wax paper.

  2. In a large bowl, combine the mincemeat, crumbs, coconut, brandy, corn syrup and 1 cup powdered sugar until well blended. Cover & chill 4 hrs or as long as overnight.

  3. Place the remaining 2/3 cup powdered sugar in a shallow dish or pie plate. Roll heaping teaspoonfuls of cookie mixture into 1 inch balls. Roll in powdered sugar to coat evenly. Place on wax paper. Chill at least 1 day in airtight container to blend flavors.
