Ingredients
- 1. Soya bean chunks : 1 cup (boiled with 1 tsp of salt)
- 2. Cauliflower : 1 piece (separate the florets & cut into halves)
- 3. Potato : 1 piece (boiled & diced)
- 4. Turmeric powder : 1 tsp
- 5. Red chilli powder : 1 tsp
- 6. Sugar : 1/2 tsp
- 7. Oil : as required
- 8. Ghee : 1 tbsp
- 9. Cinnamon : 1” (roasted & powdered)
- 10. Cardamom : 2 pieces (roasted & powdered)
- 11. Clove : 2 pieces (roasted & powdered)
- 12. Roasted jeera powder : 1 tsp
- 13. Salt : to taste
- 14. Bay leaf : 1 piece
- 15. Whole jeera seeds : 1/2 tsp
- 16. Tomato puree : 2 tbsp
- 17. Onion paste : 2 tbsp
- 18. Garlic paste : 1 tbsp
- 19. Ginger paste : 1 tsp
- 20. Coriander leaves : 1 bunch (chopped)
Directions
- Heat oil in a wok.
- Fry cauliflower & potato. Keep aside.
- Add ghee.
- Add onion paste, garlic paste. Stir till golden brown.
- Add bay leaves & whole jeera seeds.
- Add sugar, turmeric powder, red chilli powder, ginger paste, tomato puree & slat. Stir 3 minutes.
- When oil releases add fried potato & cauliflower & soya chunks. Stir well.
- Pour 2 cups of water & cover.
- Cook for 2 minutes. Add coriander leaves, cinnamon, clove, cardamom, jeera powder. Stir well.
- Remove from heat. Garnish with coriander leaves & serve.
