Ingredients
- 1. Spinach (palak) : 2 bunches (chopped)
- 2. Pumpkin : 100 gm (diced)
- 3. Flat beans : 100 gm (chopped)
- 4. Potato : 1 piece (boiled & diced)
- 5. Bori : 10 pieces
- 6. Brinjal : 100 gm (diced)
- 7. Dry red chilli : 1 piece
- 8. Five spices : 1/2 tsp
- 9. Mustard paste : 1 tbsp
- 10. Oil : 4 tbsp
- 11. Salt : to taste
- 12. Sugar : 1 tsp
- 13. Ginger paste : 1 tsp
- 14. Turmeric powder : 1 tsp
Directions
- Heat 2 tbsp of oil in a pan.
- Fry the bori till golden brown & keep aside.
- Add 2 tbsp oil to the rest of the oil.
- Add dry red chilli, five spices. Stir.
- Add pumpkin, flat beans, brinjal & stir fry till golden brown.
- Add salt, turmeric powder, sugar & stir well.
- Add ginger paste, spinach, potato & cover with a lid. Cook till the vegetables become tender.
- Uncover. Add mustard paste & stir till dry.
- Remove from heat & serve hot with steamed rice.
