Ingredients
- 1 tablespoon butter
- ground pepper, to taste
- 1/2 tablespoon vegetable oil
- 1 1/2 cups apple juice
- 2 pounds pork roast
- 1 1/2 cups water
- 2 small yellow onions, chopped
- 3-4 medium potatoes
- 1 clove garlic, minced
- salt to taste

In a large pot, heat the butter and oil over medium/high heat. Place the roast in the pot and sear it on all sides until well browned. Remove the roast and set aside.

In the same pot, sauté the onions for 5 minutes, scraping loose the roast bits on the bottom of the pot. Add the garlic and pepper and sauté for 1 minute. Return the meat to the pot and pour in the apple juice and water.

Over high heat, bring to a boil. Reduce heat to medium low and simmer for 2½–3 hours, turning the meat over halfway through the cooking time. Add the potatoes about an hour before the meat is done so they don’t overcook. A slow cooker may be used for cooking the roast, if desired.
