Sally’s Meatloaf

I didn’t have everything I needed to make an existing meatloaf recipe, so I created this one using ingredients I had on hand at the time.

Cook time: 60 minutes
Serves 2 people

Ingredients
- 1 egg
- 1 envelope Lipton's onion soup
- 1 small garlic, minced
- 2 T. milk
- 1/4 C. ketchup
- 1 T. Worcestershire
- 1/2 t. pepper
- 1 lb. ground beef
- 3/4 C. Ritz cracker crumbs (18-20 crackers)

Preheat oven to 350°. Lightly spray loaf pan with cooking spray

Mix egg, soup mix, garlic, ketchup, Worcestershire, milk and pepper in a bowl. Add meat and cracker crumbs and mix well.

Put into prepared loaf pan

Bake 1 hour. Let rest for a few minutes before slicing. Serve with barbeque sauce or gravy. Leftovers make excellent sandwiches.

This recipe is perfect for two people. It could be doubled for a family.
