Ingredients
- 1 1/2 lb chicken breasts, cut into 1/4 " pieces
- 1 T olive oil
- 1 med onion, chopped
- 1/2 c whole grain brown rice
- 3/4 c roasted red peppers, sliced
- 2 c chicken broth
- 1/4 t powdered saffron
- 3 T parsley, chopped
- salt
- pepper
Directions

Season chicken and cook in oil in skillet.

Add onion and saute until soft.

Stir in rice, peppers, broth, saffron, and bring to a boil.

Cover, reduce heat and simmer til moisture is absorbed.

Stir in parsley and season with salt and pepper.
