Hawaiian Duck

Ingredients

  • 3 pounds duck meat cut into 1 inch cubes
  • 1 cup Real Lemon
  • 3/4 cup flour
  • 3/4 cup parve margarine
  • 1 1/2 cup boiling water
  • 3 teaspoons of salt
  • 6 green peppers
  • 1 1/2 cup pineapple tidbits
  • 5 tablespoons corn starch
  • 1 1/2 cup pineapple juice
  • 3/4 cup sugar
  • 3/4 cup vinegar
  • 7 tablespoons soy sauce

Directions

  1. Marinate the duck in lemon juice for 2 hours. Dredge the meat in flour, then brown the meat in margarine. Add water and salt, simmer until tender. Cut green pepper into 1 inch squares, boil 10 minutes and drain. Add pepper s and pineapple tidbits to meat. Combine remaining ingredients, cook until sauce is clear and thick. Simmer 5 minutes. Serve over cooked rice.
