Apricot-Almond Rice Pudding

Ingredients

  • 2 bags white rice
  • 1 pint vanilla ice cream, melted
  • 1 cup apricot pie filling, chopped
  • 1 teaspoon almond extract
  • 1 cup sliced almonds, lightly toasted

Directions

  1. Prepare rice Empty hot, cooked rice into a medium bowl. Add melted ice cream, pie filling, and almond extract.nstir to combine (will be slightly soupy.) set aside and cool to room temperature. Spoon into serving bowls and topped with sliced almonds.
