Ingredients
- 1/4 cup honey
- 4 teaspoons fresh lemon juice
- 1 1/4 teaspoons dried thyme leaves
- 1 teaspoon Dijon mustard
- 1 teaspoon vegetable oil
- Salt and fresh-ground black pepper, to taste
- 3 boneless, skinless chicken breast halves, cut into 1-inch pieces
- 1 braeburn apple, cored and quartered and each quarter cut into four chunks (not wedges)
- 1 green bell pepper, cored, seeded and cut into 1-inch chunks
- 1 red onion, cut in half crosswise then each half laid flat and cut crosswise into slices about inch thick

Preheat a gas or charcoal grill. In a small nonreactive bowl, combine honey, lemon juice, thyme, mustard and oil. Add salt and pepper. On each of about 8 skewers, place a piece of chicken, a piece of apple, a piece of chicken, a piece of pepper, a piece of chicken and a piece of onion. Repeat until all ingredients and skewers are used. (You can put any leftover ingredients on another skewer.) Place skewers on well-oiled grill rack over medium heat. Cook, turning once, 5 minutes or until chicken appears translucent. Brush generously with honey mixture and cook 3 to 5 minutes longer, turning, or until chicken is cooked through. Makes 4 servings (2 skewers each).
