Chocolate Jaffa Cake

Ingredients
- 1 large orange
- 3 eggs
- 2 tsp vanilla extract (page 76)
- 3/4 tsp stevia
- 11/4 cups almond meal
- 1 tsp baking powder
- ⅔ cup raw cocoa
- 125 g butter, melted
Directions

Preheat oven to 140°C.

Butter a small cake tin, or baking dish

(use a good layer of butter).

Boil the orange in filtered water for
-
one hour. Change water half way
-
through to keep the oranges from
-
being bitter. Have the water preboiled
-
in a kettle so that the water doesn’t have to re-heat.

Cut the oranges into quarters, remove
-
the pith and any seeds, and process
-
in a food processor until very smooth.

Mix almond meal and baking powder
-
and set aside.
-
Mix eggs with electric beater until
-
fluffy.
-
Add the vanilla and stevia, and beat
-
until fluffy again.

Gently fold the orange mixture into
-
the egg mixture.
-
Gently fold the almond meal through
-
the egg mixture until smooth.

. Add the cocoa to the melted butter
-
and mix until smooth.

. Fold the chocolate mixture into the
-
batter until the chocolate colour is
-
throughout the mixture.

. Place into the cake tin or baking dish,

and bake for approx 40 minutes,

or until top is golden brown and a
-
skewer comes out clean.
