Chocolate Jaffa Cake

Serves 8 people

Ingredients

  • 1 large orange
  • 3 eggs
  • 2 tsp vanilla extract (page 76)
  • 3/4 tsp stevia
  • 11/4 cups almond meal
  • 1 tsp baking powder
  • ⅔ cup raw cocoa
  • 125 g butter, melted

Directions

  1. Preheat oven to 140°C.

  2. Butter a small cake tin, or baking dish

  3. (use a good layer of butter).

  4. Boil the orange in filtered water for

  5. one hour. Change water half way

  6. through to keep the oranges from

  7. being bitter. Have the water preboiled

  8. in a kettle so that the water doesn’t have to re-heat.

  9. Cut the oranges into quarters, remove

  10. the pith and any seeds, and process

  11. in a food processor until very smooth.

  12. Mix almond meal and baking powder

  13. and set aside.

  14. Mix eggs with electric beater until

  15. fluffy.

  16. Add the vanilla and stevia, and beat

  17. until fluffy again.

  18. Gently fold the orange mixture into

  19. the egg mixture.

  20. Gently fold the almond meal through

  21. the egg mixture until smooth.

  22. . Add the cocoa to the melted butter

  23. and mix until smooth.

  24. . Fold the chocolate mixture into the

  25. batter until the chocolate colour is

  26. throughout the mixture.

  27. . Place into the cake tin or baking dish,

  28. and bake for approx 40 minutes,

  29. or until top is golden brown and a

  30. skewer comes out clean.
