Passionfruit Cheesecake

Ingredients

  • 370 g organic quark, brought
  • to room temperature
  • Juice of 6 passion fruits
  • (strain seeds with strainer)
  • Juice of an orange
  • 11/2 tbsp raw honey
  • 5 sheets gelatine (or 11/4 tsp of agar agar
  • if serving vegetarians)
  • Macadamia pie crust

Directions

  1. If using gelatine, soak the gelatine

  2. in cold (room-temperature), filtered

  3. water.

  4. Mix the cheese with an electric beater

  5. until smooth.

  6. Slowly add the passionfruit juice, orange

  7. juice, and honey while mixing (keep ⅛

  8. cup juice aside if using agar agar).

  9. If using gelatine, take the gelatine out

  10. of the water, place into a small

  11. saucepan, and gently heat until dissolved. If using agar agar, gently

  12. heat a small amount of juice and dissolve the agar agar in the juice.

  13. Add to the mixture, and beat until smooth (the mixture will thicken slightly).

  14. Pour into the crust, and refrigerate for 4 hours, or until firm
