Ingredients
- 1/2 cup buckwheat flour
- 1/2 cup masa flour
- 2 tsp baking powder
- 0.16 g stevia (4 scoops)
- 1/4 cup cold, salted butter
- 2 eggs
- 2 tbsp yogurt
- 1 cup filtered water
- Coconut oil for frying
Directions

Blend the flours, baking powder, stevia, and butter in the food processor.

Whisk the eggs, yogurt, and water in a bowl.

Add the flour mixture and whisk until smooth.

Rest the batter while heating a frying pan to medium-low. Cast iron is the best

pan to use for pancakes.

Pour a little coconut oil in the pan, and add small spoonfuls of batter.

Cook for approx 2 minutes on each side, or until golden.

Serve with butter and a small amount of raw honey.
