Apricot and Coconut Cookies

Ingredients

  • 1/2 cup dried apricots, cut into
  • small chunks
  • 11/4 cup desiccated coconut
  • 3 eggs

Directions

  1. Beat eggs.

  2. Add dry ingredients.

  3. Roll into small balls, and place on

  4. a baking dish.

  5. Press each ball with a fork (while

  6. holding the outside with your fingers

  7. to maintain its structure). Turn the

  8. fork in the opposite direction and

  9. press the ball again.

  10. Bake at 120°C for approximately 20

  11. minutes, or until golden.
