Vegetable Pakoras

Ingredients

  • large onion, sliced
  • 50 g baby spinach
  • 1 cup chickpea flour
  • 1 tsp salt
  • 1/4 tsp chilli powder
  • 1/2 tsp garam masala
  • 1 tsp cumin seeds
  • 1/2 tsp ground coriander seeds
  • 1 tsp dried coriander leaves
  • 3/4 cup water
  • Coconut oil (enough to cover 2 cm
  • of a small saucepan)

Directions

  1. Mix the flour, salt, and spices.

  2. Gradually add the water while mixing,

  3. and mix into a smooth, thick paste.

  4. Separate the onion into rings and place

  5. into the batter with the spinach.

  6. Coat onion and spinach with the

  7. batter, and gather a cluster of onion

  8. rings and spinach leaves to make

  9. each pakora.

  10. Heat the oil to 160°C.

  11. Fry one or two pakoras at a

  12. time until they are golden brown

  13. (approximately 4 minutes). Turn

  14. them over halfway through cooking.

  15. Drain on paper towels and serve.

  16. Sprinkle with salt if necessary
