Ingredients
- large onion, sliced
- 50 g baby spinach
- 1 cup chickpea flour
- 1 tsp salt
- 1/4 tsp chilli powder
- 1/2 tsp garam masala
- 1 tsp cumin seeds
- 1/2 tsp ground coriander seeds
- 1 tsp dried coriander leaves
- 3/4 cup water
- Coconut oil (enough to cover 2 cm
- of a small saucepan)
Directions

Mix the flour, salt, and spices.

Gradually add the water while mixing,

and mix into a smooth, thick paste.

Separate the onion into rings and place

into the batter with the spinach.

Coat onion and spinach with the

batter, and gather a cluster of onion

rings and spinach leaves to make

each pakora.

Heat the oil to 160°C.

Fry one or two pakoras at a

time until they are golden brown
-
(approximately 4 minutes). Turn
-
them over halfway through cooking.

Drain on paper towels and serve.

Sprinkle with salt if necessary
