Sweet Potato Chips

Ingredients

  • 2 large sweet potatoes
  • Coconut oil (enough to cover
  • 2 cm ofa small saucepan)
  • Paprika
  • Salt

Directions

  1. With a quality vegetable peeler, peel the

  2. sweet potato, and continue to peel the

  3. sweet potato lengthways until the entire

  4. sweet potato is in long, thin strips.

  5. Heat the oil in a small saucepan, until

  6. it reaches 160°C.

  7. Cook the sweet potato in small

  8. batches, stirring occasionally to avoid

  9. the chips sticking together.

  10. Remove the crisps once they are very

  11. slightly brown.

  12. Place the crisps on a paper towel and

  13. sprinkle with paprika and salt.
