Creamy Skillet Potatoes

Ingredients

  • 7 cups cubed uncooked red potatoes
  • 1/3 chopped onion
  • 2 Tbs. all-purpose flour
  • 1 envelope (1oz) ranch salad dressing mix
  • 1/2 tsp. dried parsley flakes
  • 1/4 cup sour cream
  • 2 cups milk

Directions

  1. Place 1 in. Of water and potatoes in a lg. Non-stick skillet;

  2. Bring to a boil. Reduce heat; cover and simmer for 10 minute or until tender; drain.

  3. Coat skillet with cooking spray; add potatoes and onion.

  4. Cook over med. heat for 5-7 minutes or until golden brown.

  5. In a saucepan, combine the flour, salad dressing mix, parsley ,sea salt.

  6. Stir in the sour cream. Gradually add the milk, stirring until blended.

  7. Bring to a boil; cook and stir for 2 minutes or until thickened.

  8. Pour over the potatoes; toss to coat
