Ingredients
- 4 egg yolks
- 2 tbsp Dijon mustard
- 150 ml sunflower oil
- 1/2 tbsp hot (not boiling) water
- Salt and pepper
Directions

Place the eggs yolks and mustard in

a food processor and process.

Continue running the processor, while

adding the oil in a very slow trickle.

Once the mixture thickens, stop

adding oil and add the hot water very

slowly to thin the mixture.

Continue to add the rest of the oil in a

slightly faster trickle.

Add salt and pepper, and store in an

airtight container in the fridge. The

mayonnaise will keep for 2 or 3 weeks
