Ingredients
- Leg of lamb, boned
- 3 tbsp extra-virgin olive oil
- 3 cloves garlic
- 1 tbsp fresh oregano (or 1 tsp dried)
- Salt
- Ground pepper
- 1 lime or lemon, juiced
Directions

Preheat oven to 100°C.

Place the lamb in a large baking dish

(with a lid), and place 3 cm of filtered
-
water in the bottom.

Cover the lamb in the oil, garlic,

oregano, salt, pepper, and lime juice.

Place the lid on the baking dish, and
-
place in the oven.

Baste the lamb with the pan juices
-
every hour.
-
Cook for approximately 3 hours.
