Vegetable Rice

Serves 4 people
Ingredients
- 2 tablespoon Extra Virgin Olive Oil
- 1/2 cup Sweet Onion - small diced
- 1 tablespoon Fresh Garlic - fine chopped
- 1/2 cup Red Pepper - small diced
- 1/2 cup Yellow Pepper - small diced
- 1/2 cup Zucchini - small diced
- 1 cup Blanched Greens Beans - small dice size
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper - coarse ground
- 1 cup Cooked Brown Rice
- 1 each Fresh Lemon - zest
Directions

In 12” sauté pan add and heat oil

Add onions and sauté until onions become translucent, about 5 minutes.

Add garlic and sauté one minute

Then add peppers and zucchini and sauté until just tender.

Add green beans, salt, pepper and mix well

Then add brown rice, lemon zest, mix well again

Sauté until thoroughly heated and serve.
